White Chicken Chili
Recipe adapted from Pillsbury Annual Recipes 2010.

Ingredients
- 2 pounds boneless, skinless chicken breasts {cut into 1 inch pieces}
- 1 large onion chopped {about 1 cup}
- 1 large red bell pepper {chopped (about 1 1/2 cups)}
- 4 clove garlic {finely chopped}
- 15 ounce whole kernel corn {about 2 ears}
- 1 can great northern beans {drained and rinsed}
- 1 jar tomatillo sauce/salsa {about 8 ounces}
- 1 jar diced green chilis in sauce {about 8 ounces}
- 1/2 cup organic chicken broth
- 1/2 teaspoon salt
- fresh cilantro
Directions
- Spray 3-4 quart slow cooker with cooking spray.
- In slow cooker, mix all ingredients except cilantro.
- Cover; cook on low heat setting 6 to 7 hours.
- Stir well and garnish each serving with cilantro.
