White Chicken Chili

White Chili Chicken

Recipe adapted from Pillsbury Annual Recipes 2010.

Servings

Ingredients

  • 2 pounds boneless, skinless chicken breasts {cut into 1 inch pieces}
  • 1 large onion chopped {about 1 cup}
  • 1 large red bell pepper {chopped (about 1 1/2 cups)}
  • 4 clove garlic {finely chopped}
  • 15 ounce whole kernel corn {about 2 ears}
  • 1 can great northern beans {drained and rinsed}
  • 1 jar tomatillo sauce/salsa {about 8 ounces}
  • 1 jar diced green chilis in sauce {about 8 ounces}
  • 1/2 cup organic chicken broth
  • 1/2 teaspoon salt
  • fresh cilantro

Directions

  1. Spray 3-4 quart slow cooker with cooking spray.
  2. In slow cooker, mix all ingredients except cilantro.
  3. Cover; cook on low heat setting 6 to 7 hours.
  4. Stir well and garnish each serving with cilantro.

    This sounds really good. I’m going to have to give this a try. I’ve never had white chicken chili, but I’m excited about this.
