Recipe from: Ms. Stewart ;)
Servings
12 servings
Ingredients
Grilled Garlic-Lime Fish Tacos
- vegetable oil {for grill}
- 1 tablespoon extra-virgin olive oil
- 2 clove garlic {finely chopped}
- 1 tablespoon fresh lime juice
- 1 1/4 pounds firm white fleshed fish fillets {such as striped bass or cod}
- coarse salt and ground pepper
- 12 medium corn tortillas {warmed or lightly toasted}
Corn and Tomato Relish
- 1 cup fresh corn kernels {about 2 ears of corn}
- 1 medium tomato
- 1 whole scallion {white part only}
- 2 tablespoons fresh chopped cilantro
- 1 tablespoon fresh lime juice
- coarse salt and ground pepper
Directions
- Heat a grill or grill pan until medium-high. Clean and lightly oil hot grill.
- In a medium bowl, whisk together olive oil, garlic, and lime juice. Add fish and turn once to coat; let sit 5 minutes.
- Remove fish from marinade, letting excess drip off. Season with salt and pepper and grill until flesh is opaque throughout, 12 minutes, flipping once.
- With a fork, break fish into large pieces and serve inside tortillas.
- For the relish, combine all ingredients in a large bowl.
- Season to taste with coarse salt and ground pepper.
- Serve on top of fish inside tacos.
{To store the relish, refrigerate in an air tight container for up to one day.}
