Grilled Garlic-Lime Fish Tacos {served with Corn and Tomato Relish}

Fish Tacos with Tomato and Corn Relish

Ingredients

    Grilled Garlic-Lime Fish Tacos

    • vegetable oil {for grill}
    • 1 tablespoon extra-virgin olive oil
    • 2 clove garlic {finely chopped}
    • 1 tablespoon fresh lime juice
    • 1 1/4 pounds firm white fleshed fish fillets {such as striped bass or cod}
    • coarse salt and ground pepper
    • 12 medium corn tortillas {warmed or lightly toasted}

    Corn and Tomato Relish

    • 1 cup fresh corn kernels {about 2 ears of corn}
    • 1 medium tomato
    • 1 whole scallion {white part only}
    • 2 tablespoons fresh chopped cilantro
    • 1 tablespoon fresh lime juice
    • coarse salt and ground pepper

    Directions

    1. Heat a grill or grill pan until medium-high.  Clean and lightly oil hot grill.
    2. In a medium bowl, whisk together olive oil, garlic, and lime juice.  Add fish and turn once to coat; let sit 5 minutes.
    3. Remove fish from marinade, letting excess drip off.  Season with salt and pepper and grill until flesh is opaque throughout, 12 minutes, flipping once.
    4. With a fork, break fish into large pieces and serve inside tortillas.
    5. For the relish, combine all ingredients in a large bowl.
    6. Season to taste with coarse salt and ground pepper.
    7. Serve on top of fish inside tacos.

    {To store the relish, refrigerate in an air tight container for up to one day.}

      They are! Seriously! I had never liked fish tacos before because I thought it was just weird, but they were delicious. We have them all the time now! Let me know if you try them!
